Shelf life and FSSAI: sort these first
Test your shelf life. Make a small batch, pack it exactly as you would ship it, and keep it at room temperature. Open one pack each day and check the smell, taste and texture. The last day it is still as good as fresh is your limit. Print a best-before date that comes well before that day, because the box will sit in a warm van and then on someone’s shelf.
Register with FSSAI. Anyone who makes, packs or sells food, including from home, is generally expected to be registered with FSSAI, the Food Safety and Standards Authority of India. Apply on FoSCoS, its official portal, and confirm which registration or licence applies to you there or with a food-licence consultant or CA. Fresh mithai: sell it locally, and say so
Milk sweets are a Diwali favourite, and they are the one thing you shouldn’t put in a courier. Sell them for your own city: make them the day before or the day of delivery, and deliver yourself or through a local delivery service.
- Put the area in the product name, for example “Kalakand, 500 g (Indore delivery only)”. Buyers skim; the name is what they read.

Pre-orders you can actually keep

- Put the date in the product name, such as “Besan ladoo box, 500 g (dispatch 30 Oct to 3 Nov)”.
- Use the stock count as your cap. Set it to the number of boxes you can make for that window. At zero, the store shows sold out and stops taking orders.
- Prefer online payment. A refused cash-on-delivery parcel of food can’t be resold. Cash on delivery is one switch for the whole store (Settings → Checkout), so if most of your range is made to order, add an extra COD charge or turn it off for the season.
- Confirm each order on WhatsApp with the dispatch date, so nobody expects it sooner.
Packing sweets for the courier
- Airtight first. A sealed pouch or tin inside the box, not loose sweets in a cardboard tray.
- A tamper-evident seal on every box, so the buyer knows nobody opened it.
- A cavity tray for ladoos, so they don’t roll into each other and crumble.
- Box in a box, with padding, so the gift box arrives clean.
- Never pack food with candles or incense. Scent travels into sweets and nuts.
